    This recipe needed to be tweaked quite a bit. I sauteed onion, ginger and garlic as well as the eggplant and bell pepper. I removed these from the pan and then followed the recipe as directed. I added a little less water/ broth and it was still very watery and simmered for much longer than in recipe. Also added a 1/3 more curry paste and fresh squeezed lime juice as it was somewhat bland. Finally, also added air fried tofu and garnished with chopped cilantro and green onion. With all these modifications, it was tasty.
