Irish soda bread from How to Cook Everything: Simple Recipes for Great Food (page 245) by Mark Bittman

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute yogurt or soured milk for buttermilk, mixture of whole wheat/all-purpose flour for all-purpose flour, and oil for butter.

I’m not sure if this bread is supposed to be as dense as it finished, but 30 seconds kneading in the food processor seemed long to me. I know adding raisins and caraway seeds is not traditional, but I threw a few seeds on the top anyway. This was pretty easy to pull together last minute.
