    I've tried this recipe twice and was disappointed both times. The texture is porridge-like instead of spongy. I don't care for the flavor much, either; they seem too sweet and under-salted to me.

    Definitely a go-to pancake at our house, I have made them many times. Hearty and delicious! Like another commenter, I choose to increase the AP flour from 1/3 cup to 1/2 cup to thicken the batter a little. A teaspoon of vanilla is also a welcome addition. Texture is better with full fat buttermilk

    My new favorite pancake recipe even my son loved it. I ended up adding a few extra tablespoons of flour and some vanilla extract to the batter but these pancakes really are fluffy and light. I also ran out of brown sugar so I subbed coconut sugar

    Oh so good. Light despite the oats. I love these with 1 slice of banana cooked into each small pancake.
