    This was a very easy and fast recipe. You could easily sub a variety of green vegetables and the recipe is forgiving if you don’t have the exact amount called for. I used 8 oz of seitan instead of 6 oz; I chopped whole almonds instead of using sliced/slivered; I used a mix of maitake and white button mushrooms instead of porcini; and I used 12 oz of asparagus instead of 16 oz. The recipe still tasted delicious. My kids really like seitan. I think it has a similar texture to chicken, so I find it pretty kid friendly.
