    Wow, this was a terrific weeknight meal of chicken breasts. Usually kids hate them as they are "dry" and I stick to thighs. Husband LOVED the sauce and we used the abundant CSA arugula very well. I suspect all of the cutlet recipes in this book use a similar method and will be on the to-make list now.
