  • Sauteed chicken cutlets with arugula

      Wow, this was a terrific weeknight meal of chicken breasts. Usually kids hate them as they are "dry" and I stick to thighs. Husband LOVED the sauce and we used the abundant CSA arugula very well. I suspect all of the cutlet recipes in this book use a similar method and will be on the to-make list now.

  • Roasted butterflied chicken

      This was a last-minute use the chicken before you can't recipe. Wow, actually had it in the oven w/in 15 min. AND it was perfectly done in 30. Everyone loved it. I did not have tarragon so I used thyme, and it was wonderful. Served with roasted potatoes and a kale salad.
