    Made for birthday picnic. I increased the recipe by 50% (using 18 eggs). I cooked the eggs following the steaming method as instructed and they were perfect, most having just a spot of jamminess in the center. Cooked the eggs, cut in half, and made the filling the night before, then stored separately (with the filling ready to go in a piping bag), and assembled the next day. These are perfect basic/classic deviled eggs, and even the small crowd devoured all of them.

    5 stars! This made the best-tasting classic deviled egg I have ever tasted. The texture of the yolk filling is silky, and the little bit of white wine vinegar adds enough tang to cut through the richness and add some interest. For funsies I made another batch using ume plum vinegar instead of white wine vinegar and holy COW. Will make again.
