Can substitute jalapeño chiles for serrano chiles, baby Yukon Gold potatoes or yellow fingerling potatoes for papas criollas, and additional bay leaves mixed with parsley for dried guascas.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Nice change from the usual chicken soup. Great with home made stock. Definitely make the aji and use sour cream/greek yogurt which adds a lot to the final dish.
