    This recipe gives instructions for hand cutting the spatzle. The batter consistency doesn't work very well in a spatzle maker. I ended up with pea-sized spatzle rather than little noodles. And the semolina gives much more of a conventional pasta texture as opposed to the usual somewhat softer spatzle texture.
