Pasta with tomato, bacon, and onion (Pasta alla Amatriciana) from The Cook's Illustrated Cookbook: 2,000 Recipes from 20 Years of America's Most Trusted Food Magazine by Cook's Illustrated Magazine

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute bacon for pancetta, and perciatelli or linguine for bucatini.

This cost me a small fortune to make as my grocery store charged me $12 for Pecorino Romano cheese. The dish was quite easy to make but I can't say that I could taste either the pancetta or the cheese. We all enjoyed it and I'd make it again. It had a spicy fresh flavor.
