Corn and apricot muffins with orange essence from The Cook's Illustrated Cookbook: 2,000 Recipes from 20 Years of America's Most Trusted Food Magazine by Cook's Illustrated Magazine

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

These were ok. Soft, fluffy muffin with nice apricot flavor, and kind of exotic with the orange essence, when warm. The batter seemed too much for 12 muffins but I did get it all into the tin. And while the muffins rose and touched each other, making a nice large muffin, they didn't overflow. The recipe makes too much sugar-and-orange-zest topping and I struggled to get it all onto the muffins. I ended up having large globs of it that mostly fell off. I wish I had sprinkled it more evenly, and perhaps pressed it down so it stuck. My muffins needed at least 5 minutes more than the 18 minutes indicated.
