    This is a mild-flavored soup that uses celery and just a few other items you're likely to have on hand — onion, scallion, dried thyme, vermicelli, and milk. I appreciate soups that use a water base rather than broth because it just seems easier, more economical, and somehow more magical when water turns into a colorful, flavorful soup. I didn’t have vermicelli so I used farfalle and precooked it al dente before adding. While this pretty pale green soup was mild and soothing, I did find myself sprinkling garlic powder on my second bowl.
