Grilled marinated pork tenderloin from Essential Pépin: More Than 700 All-Time Favorites from My Life in Food (page 361) by Jacques Pépin

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I skipped the honey and it was still great. I added a little fresh cilantro to the marinade and I might go easier on the fish-sauce next time I make this.

Prepared this recipe as written, except that I doubled the recipe. The pork marinated for about 3 hours and cooked for 13 minutes or so and went into a 175 oven for 8 minutes (my oven doesn't go as low as 150). The result is nice but make sure you oil those grates as my loin stuck quite a bit to the grill due to the sugar. Flavour wise this is quite nice and the pork had subtle heat from the 1 jalapeño I used. I do think there is a fair bit of fish sauce in this which gives a nice flavour but there was a definite funk in the air, which is fine but my little one objected to it a bit. He did enjoy it but we had to get him past the smell.
