Slow-cooked pork roast from Essential Pépin: More Than 700 All-Time Favorites from My Life in Food (page 362) by Jacques Pépin

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made this with a 2 pound pork shoulder. I didn’t have cayenne pepper (or couldn’t find it) used a little red pepper flakes. This was way spicier than anticipated with what I used. The meat wasn’t tender or juicy. At 250° for 1 hour 35 minutes. Not much inclined to try again. 2nd day as leftovers: cubed slices of this meat and added it to some leftover chicken and steak then mixed with roasted veggies … The meat is well flavored and more tender; enjoyed this as leftovers much more the 2nd day.
