Queso cookies from The Homesick Texan Cookbook (page 97) by Lisa Fain

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

As part of a pre dinner nibbles spread for guests, these were the sleeper hit of the night! I used a mix of orange & white cheddars because I wanted the orange colour, 18 g dough balls = 18 cookies (1/2 recipe) and I baked them for maybe 1 of 2 extra minutes because they did not seem done to me at 20 minutes. As soon as the 1st person ate one, he pushed the bowl to middle of the table and announced "everybody has to try these". They disappeared almost immediately.

Quick, easy, and they taste like a bowl of queso in cracker form. Even better, you don't have to worry about keeping the queso warm when you put these out for guests.
