    Made in instant pot: cooked pork 28 minutes, released pressure, cooked zucchini and squash 1 minute, released pressure immediately. Came out great except I cooked the pork too long initially.

    Loved the balance of flavors in this and a great way to enjoy summer veggies. I cooked this for about 2.5 hours, so the squash was pretty soft, but I was okay with that. Used 2 Hatch chilies instead of Serranos.

    Page 135 - Effortless one pot dish that would make a great weeknight dinner. It does not hold well, as the longer the corn, zucchini and squash are in the sauce, the more muddled the results. Tip: Make ahead to the point of adding the corn and squash, then add to the dish 10 minutes before serving.
