Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Having already made her San Antonio style flour tortillas, I tried these, using shortening in place of lard as suggested. These are easy to put together & roll out but I continue to struggle to keep the cast iron pan at a steady heat level....pretty predictable that tortilla #3 will burn and thus initiate the constant heat adjustment and moving the pan on / off the heat. Oh well, as promised, these were soft, a bit flaky and delicious.

    Finally, I've found the tortillas that I miss and crave! The dough comes together very easily and rolls out nicely. I found I needed to turn the heat on my cast-iron skillet to medium or else they burned too quickly. The flavour on these is much richer than tortillas made with milk and vegetable oil.
