Hashed browns from Barefoot Contessa Family Style: Easy Ideas and Recipes That Make Everyone Feel Like Family (page 188) by Ina Garten

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

These came out tasty. Like others commented, took way longer than stated. Also, couldn’t seem to get them brown and crispy. 5 tbsp of butter was too much- would drop to 3. I only used one onion, but I added more scallion, and used chives instead of parsley. I would try again with less butter and an expectation of a longer cook time.

These were very good but next time I will give the potatoes a head start (ie steam in the microwave or on the stove top) to be sure they cook through in a reasonable time. As written, mine certainly took a lot longer than the time given.

3 Tbsp butter was plenty. The potatoes took longer to cook; maybe I diced them too large. They didn't brown much. I wasn't sure about so much salt, but did end up using the full amount. I used chives instead of green onions. Overall, this was good and not too difficult or time-consuming.
