Corned beef brisket in Irish stout with traditional vegetables from Miss Vickie's Big Book of Pressure Cooker Recipes: Everything You Need to Know about Pressure Cookers with Hundreds of Quick-and-Easy Recipes by Vickie Smith

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Made this for St. Patrick's and ended up not as thrilled as I thought it might be. First thing I'd do would be to cut the brown sugar by half, as I thought this was way too sweet. The beer made a good base, and since I ignored her instructions to toss the pickling spice away but rather put the contents of the packet into the beer in the pot, it came out a sweet-hot sauce rather than just a sweet one. Also, put the rack in the electric pressure cooker and cooked the potatoes (whole not cut up) and the carrots with the meat, rather than separate so the vegetables were flavored by the beer spice liquid as well - to me it's the whole point of corned beef and veg. With the changes, it was decent, but I think there are better ones out there.
