Flemish beef stew cooked in beer (Vlaamse stoverij / Les carbonades Flamandes) from Everybody Eats Well in Belgium Cookbook: 250 Recipes from a Rich Culinary Tradition by Ruth Van Waerebeek and Maria Robbins

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute brown sugar for red currant jelly, and red wine vinegar for cider vinegar. Best made a day or two ahead.

This was highly appreciated by the whole family as very close to what you get in Belgium. I added a bit more vinegar than the recipe stated and I will probably increase it a bit more the next time, though I can see that depending on the kind of beer you use.
