Smothered cauliflower (Cavolfiore affogato) from Italian Farmhouse Cookbook by Susan Herrmann Loomis

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

I hate being a negative critic, and this is the first Susan Herrmann Loomis recipe I haven't liked (I have and use all her books), but this was not to our taste. In general, we're not fans of steamed/boiled cauliflower (roasting is SO much better), so I should've known we wouldn't like it. The individual components are good (and I used best quality ingredients) - olives, anchovies, raisins, parsley, cauliflower, red wine, but the final dish tasted all kinds of wrong and ended up being thrown away when no one would eat it. A particular pity because this is a quite fussy recipe.
