Can substitute salt pork for bacon, beef broth for chicken broth, cotechino or garlic sausague for kielbasa sausage, and green onions for shallots. "You need not use all the sausages specified - two types would be sufficient, one large (kielbasa, cotechino, or garlic sausage) and 12 small sausages (bratwurst, weiswurst, or knockwurst)."
