    Excellent rub which would work well with chicken also. I didn't make the salsa this time but I will next time.

    Two of us liked this Southwestern take on salmon fillets. The spices change the traditional flavor of salmon- we thought in a good way. The salsa is tasty on its own, and I’m glad I made a full batch for leftovers. I reduced the corn amount to half and added 1/2 of an avocado to the salsa. I used my stovetop cast-iron skillet for the salsa and the salmon. The salmon was ready to eat after 7 minutes on medium-high.
