Shanghai home-style aubergines (Jia chiang qie zi) from Every Grain of Rice: Simple Chinese Home Cooking (page 214) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

It's a good dish, althought it can be very salty if you're not mindful of your light and dark soy sauce additions. Pairs well with plain rice and/or other vegetables. It does take some time with the salting and frying in batches, so plan a little ahead.

Not a quick dish because of the salting and frying in batches, but it's mild and comforting.
