Stir-fried cucumber with wood ear (Huang gua mu'er) from Every Grain of Rice: Simple Chinese Home Cooking (page 216) by Fuchsia Dunlop

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute red chillies for Sichuanese pickled chillies.

I love this recipe. It is texturally interesting and very satisfying. I did add a signicant amount more light soy sauce, otherwise it was a bit bland. I substituted corn starch for potato flour and used a small fresh red Fresno pepper.

A surprisingly lovely dish. Balanced flavor and texture that is more interesting than the ingredients might suggest. It is especially good for offsetting dishes with huge flavor, such as those cooked with preserved black beans. This will become a staple.

Great dish and great way to use cucumber! Very easy too... I used Paris mushrooms (it is pouring torrential rain outside at the minute so not the time to go to the Asian market)... Nice anyway :) Will make again :)

Fantastic dish. Easy to prep and even quicker to cook. Made this as part of a banquet. Everyone loved it.
