    This is a very good pot pie, but it is a lot of work because it starts with poaching the chicken and making the stock rather than using leftovers., so I prefer to prepare it over 2 days. Cook the chicken, strip it, and intensify the stock on day 1. Make the filling and bake the pie(s) on day 2.
