    This is the first recipe I have cooked from this book. As it says in the head note it is surprisingly easy. It is a technique I have never seen before. You dab small cut sections of whole whiting with chile paste mixed with cornflour and deep fry. We used sand whiting. It was beautifully cooked, juicy and flavoursome, alongside rice and cabbage salad with sesame and ginger dressing. There are many more recipes that look simple and enticing in this book.
