    What a fabulous, easy dish to serve to guests! The presentation was very impressive on my platter, the flavors were wonderful and best of all this was super easy to put together. The peanut sauce only took a couple of minutes in the food processor and the rest of the prep time was simply arranging the cucumbers and shrimp and then pouring the peanut sauce onto the shrimp. The sliced green onions on top added the final special touch. Next time I might also sprinkle a few chopped peanuts on top too.
