Update: I didn’t have time to do the trial run as hoped, but the pasta dish turned out well. Here’s what I did:
1) I made the pasta sauce ( roasted garlic, olive oil, lemon juice) ahead of party time, roasted the cauliflower and walnuts ahead of party time and kept all three separated.
2) I set a large pasta pot of water on high five or so minutes before serving the soup.
3) After plating the soup bowls,I put the pasta in the boiling water and set the timer for 9 minutes.
4) As guests were finishing the soup, I left the table and drained the pasta and combined with the sauce and cauliflower to warm up together.
5) My husband cleared the soup plates and helped me serve the pasta ( I plated each bowl and sprinkled walnuts on top).
This method worked well because all the ingredients were combined Just before serving and the pasta was very fresh. I would repeat this method but probably not the recipe! Everyone ate up the “brains” ( it was served at a Halloween party) but it’s a bit bland. I quadrupled it from from America’s Test Kitchen Dinner For Two Magazine- special edition— pasta with roasted cauliflower.
