Not sure just how big jumbo muffin tins are, but maybe they'd be good for making things like stuffed peppers or tomatoes? I always find it hard to get them to stand up properly in a baking dish unless I have just the right amount/size to fill it exactly.

I've come late to this thread, but have discovered that my previously unused jumbo muffin tins are perfect for baking single-serve yeast doughs! Sweet or savoury, think of cinnamon knots. And filled yeasted dough freezes very well.

Individual Yorkshire Puddings or Toad-in-the-holes (a sausage in a Yorkshire pudding).


I love Jamie Oliver's recipe from "Jamie Oliver's Comfort Food". If you make the batter the evening before, it's even better. The flour fully encorporates into the batter (and the foaming from the beer dies down).

Double crust chicken pot pies.  Those could be frozen and reheated
