Making perfectly soft flour tortillas - preferably in advance - advice needed!   Go to last post Go to last unread

Hi all. I love Mexican food, and would like to make my own flour tortillas where possible. However, the problems I've had are that a) they aren't pliable enough (making them break/snap when rolling), b) it's hard to roll them out in perfect circles and then pick them up and transfer them to the frying pan without destroying them and c) I don't like the last-minute nature of it all, ideally I'd like to be able to make a batch in advance and then store them or freeze them until I'm ready to use them, then reheat.


Does anyone have any advice or perfect methods/recipes? The last recipe I tried was from Rick Stein's Road to Mexico, which gave me a delicious flavour but a not-pliable-enough texture. I worry that making in advance and reheating would exacerbate the over-crispy issues.


While I'm at it, the Rick Stein book is the only dedicated Mexican cookbook I have, what would your recommendations be for the best Mexican cookbooks out there? Preferably ones with UK/French editions so I don't have to do all the cup-to-ml/gram conversions myself!

I'm not sure if it's quite what you're looking for, but the whole wheat chapatis in the book Hot Bread Kitchen are pliable and stay soft after they cool. The method used here is to pre-cook the flour in boiling water before making the chapatis in the usual way. I'm pretty sure these would freeze well too.

I Have: Mexico: The Cookbook


It is very extensive. Though it has a fundamental flaw: the Mexican recipe names are not indexed, only the English translation. But EYB fixes that problem, it indexes both.
