      Omg this was a palaver!! I put the custard in the fridge so it set a bit before pouring onto the pastry, but after 2 hours it was still totally liquid. I ended up dissolving 2 sheets of gelatine in a little bit of the custard, then mixed it in with the rest of the mix. After 20 minutes it achieved a lovely set and I was able to proceed with the recipe. The passion fruit icing is essential as a tangy contrast
