• Rice salad with fruit and cheese (Insalata di riso con frutta e formaggio)

    A decent albeit bland dish that I made for a potluck. The instructions for cooking the rice are vague. I boiled it in ample water until cooked (using taste test) then drained, rinsed, and spread over a baking sheet to cook and dry a bit.

    Very bland as is. With some seasoning, a little balsamic and fresh herbs it was much improved.

    A nice side dish to make with leftover cooked rice. I actually used a container of Chinese take-out rice!

• Rice salad with saffron (Insalata di riso con zafferano)

    Husband liked this more than I did - a bit on the too-bland side for me. I mixed in the mayo instead of just putting it in the center of the mold, and topped with with some salad greens and mixed fresh herbs for serving.

• Risotto with porcini mushrooms (Risotto con funghi porcini)

    Recipe neglected to list amount of saffron; I used a pinch.

    This is a good basic risotto recipe. I made a half recipe and added 1/2 teaspoon truffle oil at the end as I was tasting for seasoning and the oil added a bit of extra flavor to put this over the top.

• Seafood risotto (Risotto con calamari, seppie, e moscardini)

    Very subtly-flavored rice dish. Like a lot of deceptively simple Italian recipes it really needs the best quality ingredients to shine. Also unusual for a risotto in that there is no cheese--cheese would absolutely drown out the subtle flavors here. That said, next time I would use shellfish stock instead of water to cook the risotto, to kick it up a little bit.
