  • Forty cloves garlic & tarragon chicken with roasted vegetables

      Not really sure the 40 cloves of garlic or tarragon actually added anything! And I used heaps of both, half in chook, half under! The garlic cloves in the cavity mostly didn't cook sufficiently to be able to be "squeezed" over the roasted vegetables. I did my usual baking tin roast gravy (chicken stock/wine) with the chook roasting tray, mashing in that garlic and without that I think the chicken would have been bland. Maybe it depends on the "age" of the garlic? The tarragon was freshly cut from the herb garden.....

Food has always played a key role in Billy Law's life. In his native Malaysia it's not uncommon to greet people by asking "Have you eaten yet?" instead of "how are you?" After migrating to Australia in 1996, Billy took his inquisitive palate to a whole new culinary world, experimenting with the new flavours of his adopted homeland.
