      If there isn't Blaak cheese available, parmesan, Manchego or gouda works well. It' difficult to find veal where we are,but ground dark meat chicken or turkey works. And,as noted in the variation, this makes a great meatloaf.

      Great summer pasta made with heirloom tomatoes and lots of garlic. We add crisp chopped bacon on top sometimes or freshly grated parmesan-reggiano.

      Substitute ground chicken or turkey for ground veal. Gruyere slices on top. Frozen corn will work if fresh isn't available. Add a little red wine to sauce.

      The filling makes a great meatloaf. Shape into a loaf and put in a loaf pan. Bake at 350F 45 minutes; top with ketchup, chili sauce or cheese and bake 10-15 more minutes.

      Definite keeper! Lovely way to use fresh corn from the farmers market. All done in one skillet, layering the ingredients for a wonderful combination of flavors. I increased the cider vinegar for a bit more zing and added some fresh chives from the garden. You can also find the recipe on line in Smitten Kitchen.

      We love this soup garnished with crisp crumbled bacon or croutons. It can be made with broccolini instead of broccoli - no need to peel the stems.

      Delicious salad! Made it with all red beets as that's what I had. Omitted the fennel because we don't care for it. Love the dressing!

      Very good! Made as recipe stated, except used only 2lbs of beef, added a bit more of the vegis. It worked well and served 6 easily.

      If you can find fresh lima beans, this is the way to cook them! The recipe also works for fresh favas.

      We have this often as it's easy to assemble and bake. Sometimes I parcook the potatoes in broth instead of salted water. Sometimes I top it with grated gruyere or cheddar. It always turns out toasty and tasty.

      We like this made with collard greens or Swiss chard. If using chard, no need to blanch the greens. The variation adding sweet smoked paprika is quite tasty.
