      This was easy and delicious with a very good combination of flavours. My tip would be to make a larger hole when you're coring the apples as I didn't have sufficient space for all my filling mixture.

      Lovely recipe, simple and easy to make. I left out the pomegranates, and bumped up the veg with some extra mushrooms.

      A nice, simple dinner that is quick enough for a midweek meal. I was surprised the potatoes didn't have a bit more flavour considering they were cooked in chorizo and sherry, but I liked that this was all done in one pan.

      I agree with redjanet about the potatoes - they needed quite a liberal sprinkling of salt and another couple of tablespoons of sherry. All in all though was a great one pot meal and quick to do. I served some leftover almond pesto from Jamie's Italy as a sauce/dip on the side which worked really well.
