      Yummy & reheats well (except for the eggs). In our second version, we added chicken, avocado & sesame seeds.

      I would double the fresh mint if I were to make this again because we could barely taste it in the pea purée. This was an easy and good meal. I followed the photo suggestion and made brown rice as a side and added kalamata olives.
