    Beef tamale pies pg 190, tasty and filling. I couldn’t find empanada dough but thinly-rolled Pillsbury refrigerator biscuits worked great instead. Recipe error: in assembly instructions, you should mix Half the cheese with All the polenta (based on needing cheese for topping in last step). Comments on the book: - be sure to use a large cupcake/muffin pan (cups are 3” diam. x 1-1/2” deep) vs regular (2-3/4” x 1-1/4”) unless you want smaller portions than the recipe intends. - many recipes make 24 and could easily be listed under Cooking for a crowd.

    Chilled terrines with roasted vegetable (pg 95) -- the advantage of this recipe is its use of the muffin tin which makes it easier to handle portion control and to bring only the servings needed up to room temperature. The terrine is based on a tomato aspic with eggplant, red peppers, and zucchini giving a summer sense to the terrine. It is topped with a tahini-yogurt sauce. A very useful recipe for my living situation.

      This was messy, adding 2TB of corn bread mix and then chili and then topping it to make a chili filled muffin does not work with a standard muffin pan
