    Re: mjes note -- the specified honey variety could and IMO should be added via EYB Note by an indexer ("Recipe suggests clover honey." etc.). Deborah is the staffer to ask about that.

    Page 36 of this cookbook has one of the best cheese and honey pairings list that I've found and it worth owning for this and the descriptions of the honey varietals. However, I wish this cookbook followed The Asheville Bee Charmer Cookbook where the preferred honey varietal is specified in the recipe. Here the preferred varietal is specified in an introduction to the recipe, therefore the recipes are indexed with a generic "honey".
