  • Roasted tofu & peanut noodle salad

      This was similar to a Power Plates recipe we’ve had which we loved. This recipe had fewer steps and less prep than that one which makes this more user friendly when time is of the essence. My husband said he wants to have this again. The peanut butter sauce brings all the elements together nicely.

      This wasn't bad. I wanted something warm for dinner, so sauteed the salad ingredients, which worked just fine. My husband would like me to try it as a salad next time, so I will wait to make it again when it isn't so cold outside!

      Magical. I make this soup at least once a summer, and it is fabulous. Wonderful combination of sweet and savory, and the flavors all balance out. Can't say enough good things about it.
