  • Layered aubergine & lentil bake

      Very good combination of flavours, easy to make, but it is quite time consuming. You need to roast the eggplant, and cook the squash, lentils, onions etc before layering the ingredients and baking in the oven. The recipe says 15 minutes prep time but it takes much longer. Other than that, a really nice dish, very nutritious with great flavour.

      Delicious. I used slightly tart plums, and used all muscovado sugar as we didn't have any Demerara. Fresh from the oven, it worked perfectly as a pudding with cream.

      These are really good and freeze well. The kids have been enjoying them for breakfast with some yoghurt and a little bit of honey. They’re sweet enough for me, but some people might want to add a little more on top when eating.
