  • Thai burgers with sweet potato chips & pineapple salsa

      These healthy burgers were really good, the family really enjoyed them. I used ground chicken but pork would be just as tasty. The recipe suggests pork or beef but I don't think beef would be right with the spices and flavouring. Other than that I followed the recipe, my 9yr old handled the chili well ( I used 1 red finger chili ). The pineapple salsa is really worthwhile, takes 2 mins. The whole dish took 20 minutes to make, perfect for midweek dinners.

      Brilliant! Used fresh beetroot and added the lightly-braised stalks and leaves to the lentils before serving.

      I still haven't told my VERY fussy teenager that this cake has beets in it - he has eaten 1/4 of it by himself! Warming gently in the microwave makes it very yummy...

  • Spiced orange cake with plum sauce & Christmas pudding ice cream

      This cake is so delicious - love anything almond, and combined with the strong orange flavours makes it my perfect dessert. I made the plum sauce, but it would go well with strawberries or other berries. I had some leftover Christmas pudding, and mixed it in with ice cream. There are many different flavours - almost like having two desserts on the plate. I'd make the cake again but probably not the whole thing - unless I happen to have leftover Christmas pud!
