    Regarding the Payday peanut candy recipe, my caramel never reached the "golden thread-y" stage so just go by the candy thermometer reading even if it's a bit liquid-y. Also, almost all the peanuts fell off the top because the nougat started cooling really fast. For my next batch, I'm thinking I will add the peanuts immediately after adding the peanut butter...

      The dough is a bit hard to work with, especially if you chill it for too long or not long enough. Tastes good, and keeps well.

      These were my first failed marshmallows out of three batches I made--I think it was in part the weather and in part my stupid idea to swirl in some dulce de leche. Anyway, don't make marshmallows if it is super humid, they may not set up right.
