Notes about Recipes in this book

  • Crushed butter beans, garlic and thyme on toast

    • eatdrinkstagger on September 06, 2020

Very similar to a recent Nigel Slater recipe in his Observer column.

  • Vegetable soup

    • eatdrinkstagger on September 12, 2022

I prefer loads of veg in my soup so doubled quantities of veg (except for onion); also used veg stock.

  • Baked lemon risotto

    • eatdrinkstagger on July 01, 2022

This recipe needs to mention that you should have either white wine or white vermouth on hand.

  • Broad bean, Parmesan and mint risotto

    • eatdrinkstagger on October 04, 2022

Might be better to spoon risotto onto a bed of pea shoots, or mix them in when the mint goes in so the stalks soften.

  • Creamy barley risotto with chestnuts, porcini and cavolo nero

    • eatdrinkstagger on May 23, 2020

Loses a lot of its flavour so best eaten immediately/fresh. I used kale in place of cavalo nero and might use more chestnuts in future.

  • Kale, Parmesan and pine nut macaroni

    • eatdrinkstagger on May 16, 2019

I’d personally double the amount of pine nuts, kale, basil, garlic cloves, cream & Parmesan (if using 500g of macaroni) if you want more umami (especially from the cheese). It’s much tastier and saltier if you do use the anchovies but then isn’t strictly vegetarian.

    • eatdrinkstagger on September 06, 2020

Anchovies are listed in the recipe but not included here, so this recipe isn’t strictly vegetarian.

  • Salted chocolate pistachio cake

    • debbyc on September 08, 2014

A dessert for grown ups rather than an afternoon tea, Very good, a great success as everyone wanted seconds. Very rich, serve with creme fraiche as it definitely needs the acidity/wetness to contrast the richness. I found one listed ingredient slightly ambiguous "200g plain and milk chocolate", as I wasn't 100% sure if that meant 200 plain plus 200 milk, or 200g in total that was a mix of the two. I made it with 200g of 52% dark chocolate by Callebaut (a Belgian gluten free chocolate as I was catering for a coeliac). It took longer to cook than the recipe stated and I had to cover it with paper so it didn't catch at the end. It is a very solid cake so it does take a while to cool, but it did not crack or fall during cooling. Recipe is definitely a keeper.

Publishers Text

Rosie Ramsden has invented a whole new way of planning meals: it's called The Recipe Wheel. She takes one simple, core recipe - like risotto - that sits at the centre of its own recipe wheel. From there lead spokes or threads to new, more developed recipes - select your perfect dish by occasion, budget or time. Each wheel is like a mind map, bringing flavours together and encouraging the reader to mix and match, adding to their own creativity and cooking skills. A basic roast chicken inspires dishes like chicken, mango and cashew nut curry; white bread goes into beetroot panzanella or butterbean, garlic and thyme on toast. Get creative with risotto with Barley risotto with chestnut and savoy. A simple sponge cake becomes three-tier vanilla raspberry cake, and custard is transformed into rhubarb treacle creme brulee or peach and amaretto trifle. It's a completely original idea - the book will be illustrated only with the recipe wheel graphics. This innovative cookbook, from an exciting new voice in cookery, turns the idea of the traditional recipe book on its head.
