      Pg 156 - I made these little yummy cakes with Xylitol instead of the caster sugar, almond milk (unsweetened) replacing cow's milk and used frozen (but just thawed) raspberries. They are very moist and quite muffin like so we've been eating them with coffee as well as a dessert with yoghurt and homemade raspberry sauce (frozen or freeze dried raspberries cooked and sweetened with low GI sweetener ie Truvia). They are a real winner and will be making them again and this time might swop out the fruit for something different ie Rhubarb perhaps?
