      Nice variation on the traditional tomato-mozzarella salad; the pesto dressing gives it a different finish. It's very filling and easily makes a satisfying lunch or light dinner for two.

      Dressing was a bit thin. Don't know that I'd follow this technique for Caesar salad again (though I did appreciate that it used cooked garlic instead of raw.)

      This was fine for a somewhat different and filling salad - I had it for a light dinner on a really hot day when I didn't want to eat anything too heavy. I slightly overcooked the potatoes but it ended up being ok as they added a little "body" to the dressing.

      This was actually tastier than I expected - and even better the next day once the leftovers had had more time to marinate in the olive oil and lime. I've been doing a lot of salads and sides with canned beans during this "quarantine" time and this was a good one, a nice side with some bbq sauced pork chops and also as a lunch salad over greens the second day.

      Very good! I decided to make this to use up some leftover cooked rice. Great way to mix up a variety of pantry ingredients with a few fresh herbs and seasonings for a different and flavorful side salad. (I didn't have golden raisins, so I used some chopped mixed dried fruit instead.)

      Ended up with an overload of fresh favas after the local farmer's market just gave me the end of their harvest one day! This simple salad was a nice way to enjoy them. I used some smoked mozzarella I had for a little extra depth of flavor. Great for fava lovers...others may find it a touch boring.

      I've made this a few times and really enjoy it. Very addictive way to prepare zucchini that can otherwise be a bit bland, reminds me of "sweet and sour" Venetian recipes.

      Surprisingly good for a somewhat unusual combination of salad ingredients - the husband especially enjoyed it, much to HIS surprise. Sweet, tangy, and very filling. I think it would make a nice buffet salad for something different from a typical bean or potato salad.
