  • Paprika chicken thighs with Brussels sprouts

      A very quick and easy dinner. Quartered sprouts, lemon slices (I used lime as out of lemons) roasted with chicken thighs rubbed with a smoked paprika/garlic paste. 20 minutes in a hot oven and done. I love roasted sprouts so this recipe worked well for me.

      This dish was pretty good, with a nice smoky flavor from the paprika. I loved how easy to prepare it was. I made it with bone-in, skinless chicken breasts and they were well-cooked in the time suggested, as were the brussels sprouts. I'd definitely make this again.

  • Mini meatloaves with green beans & potatoes

      This was very tasty and relatively quick. Used beef/bacon ground meat mix, greased pans with a little olive oil instead of cooking spray/foil. Potatoes didn't get crispy as I would have liked, but still good. Potatoes got an extra 10 min in oven while I was prepping meat mixture and beans, which worked out fine since the wedges were a bit large. Meat loaves were done/at temp in the minimum time.
