      Made this to use up some cold brewed coffee. Nice idea if you don’t want to throw it away. The cake was nice and moist, although way too sweet for my taste. I even reduced the white sugar by half a cup and only had a taste without the frosting. My husband with a more sweet tooth enjoyed it very much though.

      Once you have all the ingredients set up this comes together really quick. I made the enchilada sauce from scratch and used a little bit less meat.a little bit too rich for me, but my husband loved it.
