    This is a book my son brought home from Hawaii while a teenager. He then used Evil jungle prince with chicken and Sting beans with fresh ginger to impress the girls. Twenty years later this is still a go-to cookbook for a few favorites. We've gone from the original to the revised edition.

      Recipe makes an AWFUL lot of sauce for the amount of shrimp used. I'd cut the recipe or set plenty of the sauce aside to use at another time.

      Recipe also calls for mushrooms, which are not listed in ingredient list. This was unexpectedly delicious for a very simple recipe! Since I only had dried lime leaves I added some grated lime rind and lime juice. The flavor was surprisingly complex - sour and sweet, a nice silky sauce, and not too heavy, either. Recipe also suggests serving on shredded cabbage which I'd say is a must, as it adds some crisp texture and some brightness to the dish.

      This is one of the first recipes that my son learned to cook as a teenager. He found it very good for impressing the girls. The chile-lemongrass-kaffir lime-coconut milk provides a real Thai flavor without requiring long hours searching for ingredients. And the recipe requires only minimal knife skills making it a suitable starting point.

      This is the first Thai dish I ever cooked (in the first Thai cookbook I bought) and we are still enjoying it thirty-some-odd years later.

      Pretty simple and tasty recipe - I made with more than the called for amount of chicken and only used 1 tablespoon of fish sauce as it's a flavor I only like in extreme moderation - especially in a dish without a lot of other strong flavor components. Got a thumbs-up from the husband as well.

      This is our family's standard side dish for Evil jungle prince with chicken. The ginger is sufficient to give it a distinct flavor profile while the coconunt-lemon grass-chiles tie it in with a Thai flavor profile.
