      I halved the quantities and it was still plenty enough for 4. What obesity epidemic? That aside, a tasty combo, the mushrooms gave it a good texture balance. It might be easy but it's not what I'd call a quick cook.

      Delicious. Can use pork belly or pork shoulder, note the separate instructions. Lovely crackle.

      Used Swiss button mushrooms in place of beef mince for vegetarian option. Added olives.

  • Four corners lentil soup

      Delicious, rather spicy, vegan, and very healthy. Next time I'll use a can of crushed tomatoes instead of the canned whole tomatoes. Also add cinnamon to the spices. Great topped with chives, green onions, or cilantro.
